APPAM:
1. 3 cups idli rice
2. 1 cup coconut water
3. 1½ cup coconut scraping
4. A pinch of baking soda
5. ¾ cup water
6. ½ cup cooked rice
7. Salt as required
8. 1 tbsp sugar
9. Soak the rice for 2½ hours
10. Grind it along with coconut scraping water, salt and sugar to get a batter of shown consistency
11. Keep aside for 6 hours
12. After 6 hours, take portion required to cook, add baking soda and mix well
13. Pour into hot pan and spin it; close with lid and cook

KADALA CURRY:
1. Soak bengal gram (kadala)for 6 hours
2. Wash well and cook in pressure cooker along with salt and ½ tsp turmeric powder until 6 whistles
3. In a hot pan roast 1½ cup coconut scrapings and 7 shallots
4. When roast, add 1 tbsp whole black pepper, ½ tsp turmeric powder, ½ tsp garam masala, 1 tbsp kashmiri red chilli powder, ¾ tsp coriander powder and mix well. Roast until raw aroma changes, and then turn of flame and keep aside for cooling. After it has cooled down, blend this.
5. Heat 2 tbsp coconut oil in a hot pan
6. Splutter ¼ tsp fenugreek seeds, ½ tsp mustard seeds and add 2 dried red chilli and curry leaves.
7. Add the grind masala and cooked gram along with water and cook until it boils
8. Curry is ready

WHEAT BATTOORA:
1. 2 cup wheat flour
2. 2½ tbsp semolina
3. ¼ tsp baking powder
4. ½ tsp cornflour
5. 1 tbsp ghee
6. 3 tbsp curd
7. Salt as required
8. ¾ cup water
9. Mix the above ingredients as shown and knead well to required consistency
10. Keep aide the dough for 30 minutes
11. Make small dough balls of required shape and use a rolling pin to flatten
12. Heat oil in a pan and fry the dough sheets until golden brown. Intermittently flip the dough for even cooking.

RAITHA
1. 4 onions
2. 2 green chilli
3. Curry leaves
4. 1 cup curd
5. Salt as required
6. Slice the onions and separate the layer
7. Mix it along with chopped chilli and curry leaves
8. Mix curd well, add salt and then top with chilli flakes

This is a simple yet delicious recipe that can be prepared even by beginners.
